2026-05-09 โ Switch V60 Style
Recipe:
- 16g coffee, 250 grams water at 95 degrees, comandante 26 clicks
- 50g bloom, 100-100g pour. Total time: 3:45
- Added a tiny pinch of salt
Notes:
- Initial taste: Less acidic, sweet aftertaste (with a hint of bitterness). Aroma is a bit sharper: tea like.
- As it cools: similar. This brew method has more clarity, but it also lost some of the acidity.
- Cool: slight hint of sourness. A bit astringent.
Not what I wanted out of the brew.
2026-05-07 โ Switch Immersion Style
Today's recipe:
- 16g coffee, 250g water at 92 degrees, comandante 23 clicks
- Full immersion for 4 minutes, and then drawdown of 1 minute (total 5 minutes)
Notes:
- Dry aroma: It's hard to pick apart aroma notes in this coffee. It's really good, but hard to describe. Not as 'clear' as some of the great coffees I've tried.
- Initial taste: really interesting! It's really acidic with a sweet aftertaste. Can't identify the flavour profile but I really like it.
- As it cools down a bit: more sweet, less acidic. More 'rounded'.
- Cool: juicy, lot of body.
This was a good brew. Next time: I'll try to do higher clarity extraction (hybrid or v60) with maybe a larger grind size?
2026-05-05 โ Switch V60 Style
This coffee is really light roasted for Blue Tokai. Has a lot of fines / static when grinding too, it might need to be rested for a few more days.
- 15g coffee, 250g water at 92 degrees
- 50g bloom, 100+100g pours
- The drawdown after first pour was slow, and it mostly ended up stalling after the second pour.
- Total brew time: 4 minutes. Left a bit of coffee in the switch (~30 grams).
Notes:
- Dry aroma: really interesting, but hard to place. Fruity, acidic. Good aroma, will have to pay more attention.
- Brewed coffee aroma: Sweet, juicy. Hint of some tropical notes. Maybe citrus?
- Initial taste: over extracted (bitter hit initially), with lingering acidic/sweet aftertaste. The brew didn't bring out the best in the bean.
- As it cools: I'm getting more tea/chocolate notes.
- Cool: More juicy.
Will need to re-do this with a different brew to do justice to the bean. Shows a lot of promise!
