Recipe:
- 15g coffee, comandante 20 clicks, 250g water at 95 degrees
- 150g immersion for 1:30, 1 pour of 100g. Total time: 2:45 (really fast!)
Notes:
- Even after doing a 20 click grind, the drawdown was really fast with this coffee.
- Dry aroma: really subtle, not easy to discern
- Wet grounds: Spiciness, slight sourness
- Initial aroma: sweet, juicy. Hint of sourness. Hard to tell flavour notes.
- Initial taste: Burst of sweetness initially, which turnes into a smooth aftertaste. Lingering sweetness. I think there are some tasting subtle notes but it's hard to tell. It does feel a bit complex, and not flat. Good extraction.
- Medium hot: Little more sourness in the aftertaste but similar. No astringency at this point. Very pleasant.
- Cool: Interesting transformation. I feel a bit more 'naturals' taste come out with additional sourness (though hard to tell tasting notes). Also hints of bitterness. Mouthfeel is a bit syrupy.
Very different cup than yesterday! Intruiging.

First brew.
- 15.5g coffee, comandante 25 clicks, 250g water at 95 degrees
- 50g bloom (50 seconds), 2 100g pours. Total time: 2:40
- Very light roast, apparent while grinding
- Really quick drawdown for a extra light coffee, that has a lot of offgassing and needed a long bloom.
Notes:
- Dry aroma: really hard to tell. Very subtle.
- Wet grounds: I got sourness, and some bit of spiciness (cinnamon? pepper?). Interesting.
- Initial brewed coffee aroma: Continuing with hints of spiciness. But no 'in your face' naturals style aroma (even though this is a natural processing)
- Initial taste: Aroma feels a bit juicier after ~5 minutes. Taste if very interesting: feels a bit underextracted (may need to fine tune grind size). But balanced: juicy, sweet aftertaste. Hint of acidity. But hard to identify any specific flavour notes.
- Medium hot: Flatter. Acidity is more apparent, sweetness is lacking. Finish is a bit astringent / sour. But not overly so.
- Cool: Syrupy. Slight astringency. But pleasant.
