Background

Independently owned specialty roaster founded by Vaibhav Bindal in 2018, operating out of Dhan Mill Compound in Chhatarpur, New Delhi. Bindal sources directly from farms in southern India, developing roast profiles per farm before roasting on a Probat Probatone 5 on-site.

Roasting philosophy is influenced by Scandinavian and Japanese styles — lighter roasts, emphasising depth of flavour. Q Grader oversight during early years; now relies on accumulated in-house experience. The name comes from the pangram "The quick brown fox jumps over the lazy dog."

Café at 23A, Dhan Mill Compound features a La Marzocco Linea PB ABR and Mahlkönig EK43, with Japanese iced pour-over, nitro, and cold brew on the menu.
