Background

Family farm in Renacimiento, Chiriqui, run by Allan Hartmann. The Hartmann family was recognized at Best of Panama in 2022. Rocky Mountain serves as the base for the Hachi Project — a collaboration founded in 2024 between Allan Hartmann, Diego Bermudez (fermentation researcher, Colombia), and Matheus Antonaci (INC Specialty). The project manages over 170 hectares across five farms split between volcanic soils in Volcán, Panama and the slopes of Cauca, Colombia.

The Hachi Project is known for developing the Enzyflow process, which uses glucosidase and pectinase enzymes to accomplish in 12–24 hours what takes days in traditional fermentation — breaking down mucilage, extracting bright aromatics, and unlocking the fruit's phenolic core.
