Amruthavarshini Estate

Background

Named after the Carnatic raga Amruthavarshini — "amrutha" (nectar) + "varshini" (rain goddess). Women-led farm run by mother-daughter duo Poornima Jairaj (former banker and VC partner) and Tanya Jairaj (sustainability/social impact background), mentored by coffee expert Sunalini Menon. Women workers ("the mahilé") hand-select cherries.

Uses French yeast in anaerobic natural processing with temperature and pH monitoring during fermentation. Cherries shade-dried on raised tables, regularly raked for even drying.
