Background
Wilton Benitez has 26+ years of experience growing coffee and 16 years of research into coffee microbiology. After working as QC manager at Supracafe Colombia, he co-founded INDESTES SAS in 2017 with Diego Samuel Bermudez, establishing El Paraíso 92 as a 5-hectare experimental farm in the Cauca Valley.
The farm is defined by its laboratory-grade processing infrastructure: an on-site microbiology lab, quality lab, and processing plant with bioreactors for controlled fermentation. Variables like temperature, pH, brix degrees, and electrical conductivity are monitored continuously throughout fermentation. The farm uses terraces, drip irrigation, and nutrition calculations to optimize growing conditions.
Benitez is a Q Processing Professional and one of the most influential figures in experimental coffee processing globally. El Paraíso 92 coffees are carried by specialty roasters worldwide and regularly appear in barista competition lineups.
